Italian Sausage and Rosemary Risotto

Ingredients:

4 sprigs fresh rosemary, leaves finely chopped,
2 tbsp. olive oil,
2 tbsp butter,

1 onion, finely chopped,
1 stalk celery, finely chopped,
2 cloves garlic, finely chopped,
1lb pork sausage, cut onto ½ inch pieces,
2 c Arborio rice, once rinsed in water,
1 c dry white wine,
4-5 c chicken or vegetable stock,
1 c freshly grated Parmesan cheese

Heart oil and butter in a large saucepan or stainless steel pot. Add onions and celery, cook until glassy. Add garlic, rosemary and sausage. Cook for 4 min until sausage starts to brown. Remove sausage from pan and add rice to the pot, stir for about 2 min until rice becomes translucent.  Pour in wine, which will evaporate very quickly and add ½ c of broth to the mixture as soon as it has been fully absorbed. Constant stirring is required at this point. Continue process until all stock is used up. This will take about 20 min until rice is creamy but still firm to the bite-al dente.

Add sausage to the rice, mix in Parmesan and let sit covered for 1 min until cheese has melted.

Tortilla roll-ups with cream cheese and pesto

Quick and easy appetizer that will make and impression

Ingredients:
4 to 8 flour tortillas, white or whole wheat
½ or 1 entire brick of plain cream cheese, room temperature
SUNSHINE FARM Pesto made with dried garlic, basil and our own Basil Oil

Mix together cream cheese and 2-3 tbsp Pesto until smooth,

Spread onto a tortilla, not to think, roll tortilla tightly, roll each tortilla individually into plastic wrap, chill for 2 hours

Cut tortillas with very sharp knife in and angle and place on a serving platter

cooking with honey: Asian veggie stir fry

Asian-Style Vegetable Stir Fry

Makes 4 servings
  • 1/4 cup honey
  • 1/4 cup stir fry sauce like low sodium soya sauce or Oishi sauce
  • 1/4 teaspoon crushed red pepper flakes
  • 4 teaspoons peanut oil or vegetable oil
  • 2 cups small broccoli florets
  • 2 cups small mushrooms
  • 1 small onion, cut into wedges, separate in 1-in pieces
  • 1 medium carrot, cut diagonally into 1/3-inch slices
In small bowl, combine honey, stir fry sauce and crushed red pepper flakes; set aside. In wok or large skillet, heat oil over medium-high heat; add vegetables and toss while cooking, about 2-3 minutes. Add honey sauce, stir until all vegetables are glazed and sauce is bubbly hot, about 1 minute. Serve as a vegetable side dish or over steamed rice or noodles for a main dish.

Artichoke Dip

Ingredients:

1 brick of cream cheese, room temperature,
1 can artichoke hearts, drained,
½ cup shredded parmesan cheese,
¼ tsp minced garlic,
Ground black pepper,
Pinch of salt

Mix all ingredients together until smooth, place in a small baking dish, grind some parmesan on top.
Preheat oven to 350 degrees, bake on middle rack for 20 min until dip is thoroughly heated but not bubbling and parmesan begins to brown lightly.
Serve with crackers or baked pita bread chips.

Great appetizer or TV snack!

What to do with all that fresh basil?

We sell our fresh basil in 2oz. bags and that can be too much for a single user. You usually cannot store fresh basil for more that two days but don't want it to go to waste.
Here is what I do with an abundance of basil:
I peel 3 garlic cloves for one ounce of fresh basil and chop them in a food processor. Then I add the fresh basil to the garlic and chop it until it becomes a smooth paste---pesto. One can add a pinch of sea salt, two tbsp of olive oil, parmesan or pine nuts and blend them in. I prefer to have just the garlic/basil mixture so I can add to it at a later time.
l then spoon the mixture into ice cube trays and freeze them for 24 hours. Once frozen, I pop them out and store the pesto cubes in ziplock bags.
Nothing gets wasted and I have pesto on hand at any time. It takes only 1.5 hours to thaw the pesto.

SUNSHINE FARM Pesto on pizza

It doesn't have to be tomato sauce all the time on the top of your pizza. Try SUNSHINE FARM pesto made with dried garlic, dried basil and my own Basil Oil. Spread it evenly but not too thick on your pizza dough and layer your other ingredients on top. Hint: put the cheese first before you place olives, onions, pepperoni or whatever you choose. Bake at 425-450 degrees for 20-25 minutes and the pesto, especially the garlic will bake up like roasted garlic on the edges... a little extra flavour.

How to eat Pumpkin Jam

Traditionally you eat Pumpkin Jam from a small dish with a scone or biscuit. Pumpkin Jam is like candied fruit, very sweet. Another great idea is to put it in plain joghurt--well, that is yummy.

Using Citrus Oil in baking

Substitute half the oil in your  baking recipe, e.g. for a white cake with apples or blueberries, with SUNSHINE FARM Citrus Oil and you will be surprised about the extra flavour the cake will develop. You can smell it already when the cake is baking...mmmmm

Chili Lime dipping sauce for sweet potato fries

To make a quick and easy, slightly spicy dipping sauce for deep fried things like sweet potato fries, add 1 teaspoon of Chili Lime Hotsauce to 2 tablespons of mayonnaise or Miracle Whip and combine until thorougly mixed. You may have to soften the hotsauce in the microwave for 15-25 seconds. Go easy at first.
This dipping sauce is totally addictive!!!
